Cool Bean Salad
Ingredients
- ⅓ cup red wine vinegar
- ¼ cup Dierbergs extra virgin olive oil
- 3 tablespoons honey
- ½ teaspoon coarse salt
- Freshly ground black pepper
- 1 can (15 ounces) great northern or navy beans, rinsed and drained
- 1 can (15 ounces) pinto beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained
- ½ cup diced red bell pepper
- ½ cup finely diced red onion
- ¼ cup thinly sliced green onion
- 2 tablespoons chopped Italian parsley
Directions
In large bowl, whisk together vinegar, olive oil, honey, salt, and pepper. Add remaining ingredients; gently stir until well mixed.
Cover and chill at least 2 hours to develop flavors.
