Pineapple Cucumber Relish
Ingredients
- 1 cup diced fresh pineapple
- 1 cup diced baby cucumber
- ¼ cup finely diced red bell pepper
- 3 tablespoons finely diced red onion
- 2 tablespoons chopped fresh mint leaves
- 1 tablespoon finely diced fresh ginger root
- 2 teaspoons grated lemon peel
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dierbergs olive oil
- Coarse salt and freshly ground black pepper
Directions
In medium bowl, stir together all ingredients. Let stand 15 minutes to develop flavors. Best served within 24 hours.
